Nisin

Nisin is a naturally produced antimicrobial peptide belonging to the bacteriocin family. It is produced by certain strains of Lactococcus lactis and is widely used as a food preservative due to its ability to inhibit the growth of a range of Gram-positive bacteria, including certain spoilage and pathogenic microorganisms.

Nisin is particularly useful in food applications where microbial stability and extended shelf life are important. It is commonly incorporated into products such as dairy products, processed cheese, canned and packaged foods, sauces, beverages, and other heat-processed foods.

It is valued for its effectiveness at low usage levels and can be used as part of a food preservation system alongside appropriate processing and hygienic practices.
