LM Pectin
LM Pectin (Low-Methoxyl Pectin) is a naturally derived soluble fibre and hydrocolloid commonly extracted from citrus fruits or apples. Unlike high-methoxyl pectin, LM Pectin forms a gel primarily through interaction with calcium ions, making it particularly suitable for products with reduced or low sugar content.
LM Pectin is widely used in the food industry to provide gel strength, texture, stability, and viscosity. Its ability to form gels in the presence of calcium makes it a versatile ingredient for reduced-sugar products where conventional high-methoxyl pectin may not be suitable.
It is commonly used in jams, jellies, fruit preparations, dairy products, desserts, confectionery, and other food applications where controlled texture and stability are required.
